Today somewhere between studying, making peppermint laundry powder, shopping, yoghurt making, drinking chai, watching a little bit of cricket, practising surya namaskar, baby Loving & general household duties, I made vegan cream. Aaah, 'twas one of the best parts of the day!
The recipe is the best & is stunning in its simplicity;
Vegan Cream
1 large ripe avocado
2 lady finger bananas
~ mash together.
I mix it with a fork which produces a more rustic version. If you want it very smooth simply blend it. The cream is best used straight away & I'm not sure how well it keeps in the refrigerator - but you wouldn't want to do that anyway, would you ; )
I use the cream on both sweet & savoury dishes. It is beautiful on potato wedges, nacos, fruit salads & as a side dish to any meal. It is a whole food that is a healthy combination our children love to eat.
Tonight's meal is a green salad with roasted nuts & seeds, potato wedges with vegan cream & sweet chilli sauce. What are you enjoying this week?
