These biscuits are a simple joy to make and eat. The children love the entire process too.
Ingredients ~
Creates 20 biscuits
1 cup (155g) raw sugar
250 gms softened butter
2 cups (500g) plain organic flour
6 heads English (augustifolia) lavender ~ pick your lavender in the early morning when the essence is pure and quiet.
Preparation method ~
Preparation time 10 minutes | Cooking time 10 minutes
1. Break flowers.
2. Mix in flower heads with sugar - a mortar and pescle is great for this.
3. Blend in the butter - we do this by hand.
4. Then add the flour and mix in well.
5. Roll into small balls and press down with your thumb. For extra crunch, top them with more sugar.
6. Place on tray lined with baking paper – I use a brown paper bag I’ve opened - and bake in moderate oven for 10–12 minutes until colour has changed slightly. Pop them onto a cooling rack.
* A moderate oven is usually 180 degrees C/356 F for an oven which is not fan forced.
